'Sweet, sticky, tender and moist, this Thai sweet chili chicken thighs is simple to prepare and make. It\'s so full of flavours and you can serve it with many side dishes such as rice, vegetables or salads. Prep time: 10 mins Cook time: 1 hr 20 mins Total time: 1 hr 30 mins Serves: 2-3 Ingredients 8 chicken thighs, boneless, skinless (about 1 lb) 1 tbsp garlic, minced 1 tbsp, ginger, minced 1/2 tsp dried basil 1/4 curry powder 1/4 tsp ground black pepper 2 tbsp Thai sweet chili sauce 2 tbsp honey 1 tbsp soy sauce Squeeze of fresh lime juice Instructions 1. Combine all ingredients in a large bowl. 2. Mix well. 3. Cover and marinate the chicken in the refrigerator for at least 1 hour or overnight. 4. Preheat the oven to 425°F. 5. Line the baking sheet with parchment paper. 6. Place the chicken on parchment paper baking sheet. Pour some of the marinade on the top of the chicken. 7. Bake for 20 minutes at 425°F. Turn the broiler on. Broil the chicken until it turns a nice brown colour, about 4-5 minutes. Serve with Jasmine rice, vegetables and a Thai garlic chili dipping sauce.
