
'This is my entry for Jaime Oliver\'s search for the next FoodTube Star with Uncle Ben\'s compitition. If you dig my video please like it above and thanks for tuning in! The recipe I\'ve prepared in the video above is original and was inspired by some of my travels through the middle east with one of my closest freinds Lena. I love getting to know a culture through its food and tasting new and exciting flavors always inspires me to get in the kitchen and try to put my own little spin on those flavors. I hope you enjoy my recipe and perhaps it will inspire you to try it at home and even make it your own! Let me know how you get on ;-) Marinated Chicken Skewers with Spicy Roasted Red Pepper Harissa & Saffron Rice 4 chicken breasts cut into 1 inch cubes For the marinade: 2 tablespoons (6 teaspoons) fresh rosemary chopped 2 tablespoons (6 teaspoons) fresh thyme chopped 2 tablespoons (6 teaspoons) fresh oregano chopped 8 juniper berries \"smooshed\" - that\'s technical kitchen jargon for crushed ;-) 5 garlic cloves smooshed 1/2 (4 fl. oz.) cup olive oil salt pepper For the Spicy Harissa: 2 roasted red peppers (from a jar or you can roast them yourself!) 1 teaspoon whole coriander seeds toasted 1 teaspoon whole cumin seeds toasted 1 teaspoon whole fennel seeds toasted 1 teaspoon whole caraway seeds toasted 2 garlic cloves roughly chopped 2 teaspoons sriracha sauce (you can substitute some chopped red chili) 2- 3 tablespoons (6- 9 teaspoons) chopped sundried tomatoes zest of 1 lemon juice of 1/2 a lemon 1/4 cup (2 fl. oz.) olive oil salt & pepper to taste For the Rice: 1 cup (225 grams) of white basmati rice 2 shallots roughly chopped 2 cups (16 fl. oz.) low sodium chicken broth 1 healthy pinch of saffron threads a pinch of salt For the \"Jogurt\" Sauce: 1 cup (8 fl. oz.) of Tofutti sour cream (If you\'re not dairy free use 2% greek jogurt) 2 tablespoons (6 teaspoons) olive oil zest of 1 lemon juice of 1/2 lemon 2 tablespoons (6 teaspoons) italian parsley chopped salt & pepper to taste All you have to do is mix all of the ingredients together- viola! I also like to add 1 clove of garlic occasionally- depending on how weary I am of vampires tying to get me ;-)'
