'KitchenAid cook processor ARTISAN - Sugarless Sugar FREE Banana bread loaf recipe with dates'

'Note: Loaf did not rise as expected as the baking power used was expired. Several other trials with non-expired baking powder resulted in a lighter, fluffier bread loaf. New Deal video to follow. Accessories: MultiBlade and StirAssist ------------------------------------------------------------------------------------------------ Recipe: Sugar free banana and date bread loaf  Machine used: #KitchenAid Cook Processor   Ingredients: 85gm (1/2 cup) dried pitted dates 60ml (1⁄4 cup) water 3 ripe bananas, peeled 100gm (1/2 cup) coconut oil  3 eggs 75gm (1/2 cup) buckwheat flour 120gm (3/4 cup) wholemeal spelt flour or plain flour 1⁄2 teaspoon baking powder 85gm (1/3 cup) plain Greek yoghurt   Directions: 1. Preheat oven 180C/160C fan forced  2. Grease and line a large loaf tin (20cm x 9cm x 7cm).  3. Insert the “MultiBlade” into the bowl and add dates and water. Manually select 130C, 3 minute cook time and STIR SPEED INTERMITTENT and press START.  4. Once cooking time has ended, open lid to release steam; Cool slightly.  5. Add 3 of the bananas. Press PULSE for 3 seconds. Scrape down the sides and repeat a few times until pureed.  6. Replace the “MultiBlade” with the “StirAssist” and add coconut oil and eggs. Select STIR SPEED 1 and stir until well combined.  7. Open lid and add flours and baking powder. Select STIR SPEED 2 and stir until just mixed through. Open lid and scrape down the sides, add yoghurt and continue to stir on SPEED 2 for 20-30 seconds or until mixture is a smooth batter. Spoon into prepared pan.  8. Bake 50 -55 minutes or until a skewer inserted comes out clean.   Cool on a wire rack before serving.   NOTE: this loaf will keep well refrigerated for 2-3 days. Toast or just reheat in microwave. Spelt flour can be replaced with plain flour and yoghurt with sour cream.   There you have it ....
